Authentic recipe for Schnitzel, a classic Austrian dish:

Ingredients:

- 4 pork or veal cutlets (about 1/4 inch thick)

- 1 cup all-purpose flour

- 1/2 cup breadcrumbs (preferably Panko)

- 1/4 cup grated Parmesan cheese

- 2 eggs

- 1/2 cup butter, melted

- Salt and pepper to taste

- Lemon wedges and chopped parsley for garnish


Instructions:

1. Prepare the cutlets: Trim excess fat, pound to an even thickness, and season with salt and pepper.


2. Create the breading station:

    - Flour: Place in a shallow dish.

    - Eggs: Beat in a separate shallow dish.

    - Breadcrumbs: Mix with Parmesan cheese in a third shallow dish.


3. Bread the cutlets:

    - Coat in flour, shaking off excess.

    - Dip in eggs, ensuring complete coverage.

    - Coat in breadcrumb mixture, pressing gently to adhere.


4. Fry the Schnitzel:

    - Heat about 1/2 inch (1 cm) of vegetable oil in a large skillet over medium-high heat.

    - Fry cutlets for about 3-4 minutes per side, until golden brown and cooked through.

    - Drain on paper towels.


5. Serve:

    - Place Schnitzel on a plate, garnished with lemon wedges and chopped parsley.

    - Enjoy with your favorite sides, such as potato salad or braised red cabbage!
