Ingredients:

- 2 1/4 cups (280g) honey
- 1 cup (200g) brown sugar
- 1/2 cup (115g) butter, softened
- 2 large eggs
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 2 1/4 cups (280g) all-purpose flour
- 1/2 cup (60g) chopped nuts (hazelnuts or almonds)
- 1/4 cup (30g) candied orange peel, finely chopped
- 1/4 cup (30g) candied citron, finely chopped
- Confectioners' sugar, for dusting

Instructions:

1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
2. In a large saucepan, heat honey, sugar, and butter over medium heat, stirring until smooth.
3. Remove from heat and stir in eggs, ginger, cinnamon, cloves, and salt.
4. Gradually add flour, mixing until a dough forms.
5. Stir in nuts, orange peel, and citron.
6. Roll out dough to 1/4 inch (6mm) thickness. Cut into desired shapes.
7. Bake for 20-25 minutes or until firm to the touch.
8. Dust with confectioners' sugar before serving.
