German Käsespätzle Recipe


 Käsespätzle (German Cheese Spätzle) Recipe:

Ingredients:

For Spätzle:
- 2 cups all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/4 teaspoon salt
- 2 tablespoons butter, melted

For Cheese Topping:

- 1 cup grated Emmentaler (or Gruyère)
- 1/2 cup grated Parmesan
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh chives
- 1 tablespoon unsalted butter

Instructions:

Spätzle:

1. In a large bowl, combine flour, eggs, milk, and salt. Mix until smooth. 2. Using a Spätzlepresse (or colander with large holes), press dough into boiling salted water. 3. Cook 2-3 minutes or until Spätzle float. Drain.
Cheese Topping:

1. In a separate saucepan, melt butter over medium heat. 2. Add Emmentaler and Parmesan; stir until melted and smooth. 3. Remove from heat; stir in parsley and chives.
Assembly:
1. In a large baking dish, create layers:
- Spätzle
- Cheese mixture
- Repeat until all ingredients are used.
2. Top with additional grated cheese.

Bake:

1. Preheat oven to 375°F (190°C).
2. Bake 20-25 minutes or until golden and bubbly.

Serve:
Serve hot, garnished with additional parsley and chives.
